I love to bake. I love to hack the crap out of old recipes and turn them into something healthy and delicious too. I'd say that 75% of the baking recipes that I have hacked have been total failures. But, the other 25% are raging successes. This is one of my finest accomplishments and I want to share it with you all.
I am gluten, soy and dairy free. This means that I hardly ever get to enjoy fun stuff like warm and wonderful Banana bread fresh out of the oven. I guess I was having a moment of self pity for my situation and decided to give it a go and see what I could do about it.
The dry ingredients
What I did not realize was that I was creating a monster in my kitchen that day. What began as a test of my skills is now a confirmation that anything is possible. Banana Bread that contains nothing but awesome and healthy ingredients that tastes better than the real deal your grandma made. Unless you had my grandma...She drank Coors light and smoked Parliaments.
Please note that this recipe contains a few ingredients that are not available in stores. The protein powder and fiber boost are 2 of my favorite products from the Daily Essentials health line. Both are gluten, dairy and soy free with no artificial sugars, colors or flavors. I chose to use them in the recipe for 2 reasons. The first being that I had them on hand and why the hell not, and the second, this is my business. If I can find a new way to use something that I love and sell, it benefits everyone I introduce it too. A protein powder now becomes a baking ingredient, not just a smoothie base. Sometimes I do dumb stuff. This was NOT one of those times.
The gooey stuff
Onto the Main Event...
Arbonne Banana Bread
1 cup Coconut Flour (I used Nutiva brand)
3 scoops (3/4 cup) Arbonne Vanilla Protein Powder
1 scoop Daily Fiber Boost
¼ cup Almond or Flax meal
¼ cup Gluten Free Oats
2 tsp. Baking soda
¼ tsp. sea salt
1 tsp. nutmeg (optional)
1 tsp. cinnamon (optional)
6 eggs
2 ripe bananas
¼ cup coconut oil, melted
1 can light coconut milk or 1 cup unsweetened original coconut milk (So Delicious refrigerated container)
4 tsp. Vanilla extract
¼ cup Organic applesauce
1/2 cup Organic honey
Optional additions: Enjoy Life Vegan Chocolate chips
Chopped Walnuts
Organic Blueberries
Oven at 350 degrees
Sift Coconut Flour into bowl
Add all other dry ingredients
Add all eggs, bananas, vanilla, and coconut milk to mixing bowl
Mix until all bananas are smashed and all eggs are beaten together
Add the coconut oil and honey
Mix wet ingredients into dry, do not over mix
Batter should look like cookie dough, light and fluffy not overly wet
Oil muffin tins or mini loaf pan and fill with batter
Bake for 25 minutes (muffins) 35 minutes mini loaves
Makes 18 muffins or 4 mini loaves
Now put them in the oven.

You can freeze these if you want to, but I doubt it will happen.
